Elderberry Gummies Recipe (Immune Booster & Kids Favorite)

Elderberry syrup is a popular remedy (especially during flu season). But there are plenty of ways to bring this delectable berry into your life. My family loves the taste of these elderberry gummies, and I love that they support the immune system and are free of processed sugar.

It was my solution when I had to take medicine when I was sick as a child. I didn’t like the taste and my poor parents would have to kick me down to make me get it. A lot of years go by (more than I’d like to admit) and it’s a much different story when I have to take my sick children for treatment.

They really love it, beg for it, and wish they could embrace it all the time. Especially when it’s elderberry syrup!

A new step on Elderberry

Recently, I made two of my kids’ favorite things on the same day: elderberry syrup and homemade marshmallows. I had a little more liquid from elderberry to make syrup and had a great idea: elderberry marshmallows.

The result is a light purple, delicious and immune-boosting treat that my kids love!

Health benefits of elderberries

If you’re not familiar with elderberries or can’t imagine why you’d want to make marshmallows with them, here are some benefits:

  • Helps relieve cough, sore throat and runny nose
  • Natural source of antioxidants and vitamins
  • Regulate inflammation during illness
  • Kids love it!

Elderberry gummies ingredients

This recipe only requires a few basic ingredients. Most of them you probably already have in your pantry.

The only unusual ingredients you need to make these are elderberries.

In some areas, you can grow your own or grow elderberries. Just be sure to use only the berries and discard the stems and leaves as they can be toxic if ingested. The brand I use sells natural or organic elderberries, which you can buy here.

gelatin

You will also need gelatin to help the marshmallow achieve the right texture. I use high-quality, pasture-raised gelatin. While I like to mix collagen powder into my teas and coffees, for this recipe you need actual gelatin. Gelatin is what “gelates” and gives marshmallows the right consistency. I got it here – that’s what’s called “beef gelatin” in the green can.

How to make Elderberry marshmallows

Many people don’t realize how easy it is to make homemade marshmallows. They won’t be the fake and sweet popsicles you’ll find at the store. But they are even better in my opinion.

The only ingredients needed are water, gelatin, honey/syrup, and in this case elderberries and optional spices. After the mixture is whipped, you must quickly pour the mixture into the oiled dish. Otherwise, it will be set up and very difficult to go smoothly. Even so, they will still be delicious as usual.

If your marshmallow mix doesn’t spread evenly, you can use wet fingertips to gently smooth the top.

Once the mixture is solid and firm enough to cut, you can use a knife, pizza cutter, or even sharp scissors. Just make sure they are well oiled or the marshmallows will stick to them. I put more oil on the knife after a few cuts

Sometimes I like to coat my cut marshmallows with cinnamon so they don’t stick together. The powdered sugar of coconut also works to remove dust. For this batch, I mixed 2 parts galangal powder with 1 part acai berry powder for a beautiful purple color.

Guide

  • Grease a 9×13-inch baking dish or parchment-lined baking sheet with coconut oil, leaving a little on the sides so it can be pulled up.

  • Bring the dried elderberries, seasonings (if using) and water to a boil in a small saucepan. Simmer gently uncovered for 10-15 minutes or until liquid is reduced by half.

  • Strain the elderberry and spices and then drain the resulting liquid. If there is more than 1 cup, then simmer a little more. If less than 1 cup, you add enough filtered water to make 1 cup.

  • Place ½ cup liquid in a stand mixer or large bowl if using a hand mixer and sprinkle gelatin on top. Mix lightly to combine and set aside.

  • Put the remaining ½ cup of liquid and honey or maple syrup in a saucepan. Slowly boil the water and honey mixture. If you have a kitchen thermometer, you want it to reach at least 240 degrees. If not, continue to cook, stirring continuously for about 5 minutes. Remove from heat.

  • Turn on the mixer with the gelatin mixture on medium speed. While whisking, slowly pour the honey/water mixture into the mixing bowl with the gelatin mixture.

  • Once all the honey mixture has been added, turn the mixer on high and whip for another 10-15 minutes or until a stiff, marshmallow-cream consistency is formed. It will form soft peaks.

  • Once the marshmallows have been whipped, quickly transfer to a greased/paper lined plate and evenly grease with a spatula.

  • Let stand uncovered for at least 4 hours (overnight is better).

  • Turn over to a cutting board and cut with a well-oiled pizza cutter or knife. Dust with cinnamon powder and/or coconut sugar if desired so they don’t stick.

Note

Shelf life and storage: DO NOT store marshmallows in the refrigerator as they will melt. Store in an enclosed space below room temperature. These will keep for 3-4 days.

How to Serve and Dosage

Since there aren’t many elderberries in this recipe, I’ll be giving my child a few without worrying about the dosage. It’s more like a nutrient-dense food. If we feel a snort, I’ll take some elderberry syrup and other things. home remedies also.
